Our latest endeavour is to bring a pizza by slice experience to the UK world fast food by offering high-quality Roman-style pizza. FRESCA experts will help guide you through an eno- gastronomic journey as you browse through their nine different types of Roman-style pizza options. FRESCA pizza alla pala dough consists of a combination of three different flours: farina 00, buratto, and whole wheat, which are all 100% Italian and come directly from the Marino mill, in Italy. After the dough has been hydrated to 98% of water and consent 72 hours of levitation to reduce the gluten content close to nothing, each pizza is created on its namesake paddle, or “pala,” and baked, as tradition instructs, in an electric oven. Topped with high-quality ingredients selected daily from the FRESCA marketplace, the final product is served fresh from the oven on the paddle and features a thick crust and crispy exterior, along with a soft and airy interior.

Since its launch in December 18 Novanta6 became a solid reference point on the San Vitale area for all those craving that slice of roman-style pizza in teglia. Tasty, long leavened slices of a pretty nourishing pizza that can already make you feel full and satisfied with a couple of them, which is nice. They also are listed (just like Forno Brisa) in the Too Good To Go app, for the evening low-cost selling of last slices’ boxes.

Compared to the wood-fired Neapolitan pizza, it's made with a high-hydration, long-rising dough and baked in an electric oven, giving us a delicious crispy flatbread.
